Apple Orchard Barbecue Sauce

Apple Orchard Barbecue Sauce

1 medium onion, grated or finely chopped
4 cups pressed apple cider (not pasteurized apple juice)
1/2 cup cider vinegar
1/2 cup firmly packed dark brown sugar
1 tablespoon whole mustard seed
1 teaspoon celery salt or celery seed
1 tablespoon Worcestershire sauce
1 tablespoon liquid smoke
2 (12 ounce) bottles chili sauce
Hot pepper sauce, to taste (optional)

Bring all ingredients to boil in a large saucepan. Reduce heat and simmer until sauce is thickened and volume is halved. Pour hot sauce into two 1-pint sterilized jars. Seal with 2-piece sterilized lids. Water-bath process for 10 minutes. Remove with tongs. Cool. Decorate with Baster Brush Wrap.

Baster Brush Wrap
1 (12-inch) length 1/4-inch wide
    red grosgrain ribbon
1 small baster brush

Center gingham squares on jar lid. Slip rubber band over fabric, gathering in around the rim of jar. Tightly tie ribbon around jar lid. Tie ribbon streamers in bow around handle of basting brush. Remove rubber bands.

    Orange Barbecue Sauce

    Orange Barbecue Sauce

    1 (12 ounce) can frozen orange concentrate
    3/4 cup (1 1/2 sticks) butter
    1/3 cup finely chopped onion
    1/2 tablespoon Tabasco? sauce

    Saut? onions in butter and mix in orange juice slowly enough to mix thoroughly. Add Tabasco sauce to taste and simmer 30 minutes.

    To use, place chicken in a shallow pan and cover with two-thirds of the sauce. Bake 20 to 25 minutes at 225 degrees F.

    Put chicken on the grill and baste liberally with sauce from the pan. Use the remainder of the original sauce at the fires hottest point to coat chicken.

          mango barbecue sauce

          Mango Barbecue Sauce

          This is delicious for barbecuing salmon.

          1 ripe mango, peeled, pitted and
              cut into small cubes
          1 cup prepared mango chutney
          1 cup finely chopped onion
          1 tablespoon minced garlic
          1 (28 ounce) can peeled plum tomatoes,
              crushed, with juices
          2 tablespoons cider vinegar
          1 tablespoon molasses
          1 teaspoon Tabasco? sauce

          Combine all ingredients in a heavy saucepan. Simmer, covered, over low heat for 20 minutes or until the sauce thickens. Cool slightly. Pur?e sauce until smooth in a food process or blender.

            Source: Jack Daniels Wood Smoking Chips, back of the bag.

            1/2 cup pineapple juice
            3 tablespoons soy sauce
            1 1/2 teaspoons ginger
            1/2 teaspoon garlic powder
            1/4 cup Jack Daniels Whiskey

            Combine all ingredients and mix well. Dip meat in sauce and place on grill over hot coals. When meat is turned, brush with sauce. Grill to desired degree of doneness. Just before meat is removed from grill, brush again with sauce.

            Servings: 8
